Fox 4 Good Day - Cinco de Mayo - Chef Chad Kelley Style

So I'm kinda sorta proud of this guy of mine.  ;)

Aside from being a total goober, an all-around awesome dad to our two kids and so incredibly patient..(with me and my inner mexican sass & with our sassy-like-her-mother threenager), this guy is also a freakin' ROCK STAR CHEF!

As Executive Chef of the restaurant group that owns Barley & BoardLSA Burger Co (both in Denton Square), and Earl's 377 (opening soon! in Argyle)... he has had TWO back-to-back TV segments on Good Morning Texas (yesterday- talking all things Barley & Board with some of the owners - Jason Lee (the ACTOR!) & Eric Pulido) and this morning on Fox4 Good Day (talking Cinco de Mayo fun).

I honestly couldn't be more proud of the hard working man I married.  With the upcoming opening of Earl's 377 Pizza (in just a few short weeks), this guy has been on OVER DRIVE...and although his stress levels have been through the roof, you can't really tell.  :)

Here's a little behind the scenes action at this mornings live taping.  :)  Great job Love..you nailed it!

If you want to see clips of both the segments click on the links below.

Chef Chad Kelley Dinner Special - Robbi's 60th Birthday

Since Chad and I moved to Frisco, almost a year ago to the day, we've had the great fortune of meeting some really great people we've come to call our friends.  From play dates with our sweet babies… to Sunday dinners at our house, Maggie, Christian and their sweet son Asher have become permanent fixtures in our lives.  J  When Maggie willingly stepped in to take care of our fur-baby Macie, after calling her in a panic the day before we were to leave to California (when our original pet sitting plan fell through), we knew we wanted to find a way to pay back this enormous favor.

So when Maggie asked for recommendations for potential catering companies for her mom’s 60th birthday, a couple weeks after our return from California, Chad immediately volunteered.  It seemed like a no brainer and we set out to help plan this special surprise for Maggie's mom.  :)

A couple weeks of planning and EIGHT courses later, the night went off without a hitch!  Tagging along for the ride, I helped Chad in the kitchen, keeping up with the plating by washing, drying and setting them out again.... and of course, trying my best to capture each dish before it went out.  But wouldn't you know.. in our haste to prepare for the night, I completely forgot our "real" camera!  Luckily my Iphone seemed to do just fine. :)

Now.. ON WITH THE SHOW!  ;)

Watermelon Salad
Creamy Feta, Spiced Cashews, Basil, Blis Sherry Vinegar

A Chef prepared dinner wouldn't be complete without a proper menu,

San Salvaje & Les Miserables - Date Night with My Chef

In the last couple of months, Chad and I have had the opportunity to make almost every Tuesday evening "date night".  With Everleigh's Dallas "Grandma", (MamaLis...or as Everleigh is now starting to call her.. MamaEEES) spending Tuesday afternoons with our bear, we use those evenings to spend quality time together. Last Tuesday, with tickets to Les Miserables in hand for later that evening, we headed downtown to check out San Salvaje, a new restaurant concept by Steven Pyles.  This fusion of Mexico, Central America, South America, the Caribbean and Cuba was an explosion of amazing flavors.  Sweet and savory was combined with the perfect amount of tangy acidity to create dishes that certainly had us wanting more.

Quinoa Salad, Puffed Cherries, Pine Nuts, Dried Apples

Amberjack Ceviche, Crema de Rocoto

 Smoked Duck Tacos, Rhubarb Salsa

Pork Belly Tacu Tacu, Fig Compote

Three Cheese Arepa, Salsa Verde

Pork Belly Tacu Tacu, Fig Compote

Escabeche of Sea Bass, Duck Fat Potatoes,
Chile Pequin Aioli

After our amazing meal, we headed to the Wyly Theater nearby for the 7:30 musical of Les Miserables.
Being newbies to this particular theater, we were pleasantly surprised to see that no one seemed to have a bad seat in the whole house.  The stage was RIGHT there.. and we'd later find, as the performance went on, that on several occasions, we became PART of the show itself, with the performers acting in the aisles and among the crowd.  A truly awesome Dallas experience...can't wait to visit the Wyly again.  :)
